I love pesto sauce! I recently ordered a flatbread at a restaurant and it came with a delicious ranch pesto. I knew I had to recreate a healthy version!
This yummy sauce is perfect to drizzle over a flatbread, pizza, quesadillas, or bruschetta. It is made with Greek yogurt so it has a bit of a tang to it. For those who don’t love Greek yogurt, consider blending mayonnaise and/or sour cream with the yogurt.
Cilantro-Lime Ranch Pesto makes over 1 Cup
1/2C Greek Yogurt
1/2C fresh cilantro
1/4C fresh flat leaf parsley
1/4C freshly grated Parmesan cheese
1/8C freshly grated Romano cheese
3 cloves of garlic
juice from half a lime
1T fresh dill
1T toasted pine nuts optional
1/2T Olive Oil
1/2T salt
1/2T black pepper
1/4T paprika
2-4T milk as needed I used coconut milk
Combine all ingredients in a food processor and pulse well until fully blended. Add more milk as necessary to reach desired consistency.
