Veggie Skewers

I have a ridiculously easy recipe for you today – and I ain’t foolin’!  These veggies were inspired by some friends.  You know when you’re invited to a potluck and you can’t decide what to make.  I polled the friends who would be at the party and settled on these healthy, oh so tasty veggie skewers.

Veggie Skewers Marinade Recipe by Amanda's ApronChoose whatever vegetables you fancy.  I love pairing the above pictured vegetables together: red bell pepper, yellow squash, zucchini, sweet onion, baby portobello mushrooms, and I added pineapple, too!  The veggies are interchangeable.  You could try it with broccoli, carrots, or asparagus.  The secret is in the marinade – which is so easy!!!

Broccoli Squash Flatbread

I decided to make this on a whim last week to see if it would be a suitable Thanksgiving Day appetizer.  It passed!  I am not making squash casserole this year, and I haven’t heard back from the family yet if broccoli casserole is in the works, so I decided to still incorporate them in a fun, new way: a flatbread!

This yummy flatbread is slightly chewy on the inside and crispy on the outside.  It has a roasted garlic white sauce and is covered in Parmesan and Pecorino Romano cheeses!  It is a great appetizer for any time of year, but especially when you want to sneak in a little something healthy before a big meal.

Pumpkin Hummus

As I was wandering the aisles of Publix for Pumpkin Week, I got a harebrained idea!  Pumpkin hummus!  I obviously love hummus and pumpkin so I figured the marriage would be perfect.  I hit up Google to see if it had been done before.  It has.  However, I didn’t love any of the recipes I found.  Some didn’t use beans at all – which is kinda the base for hummus – and others used chickpeas, which I didn’t feel would be the right texture to accompany the pumpkin.  So in a swift experiment, I whipped together my own version…and fell into pumpkin love yet again.
